Quick Fixins' With Shelley
Bacon Bundled BBQ Shrimp
1/3 cup canned tomato sauce
3 tbsp. ketchup
1 tbsp. apple cider vinegar
1 tbsp. brown sugar (not packed)
1/2 tsp. garlic powder
8 slices turkey bacon or center-cut bacon, halved
16 large (not jumbo) raw shrimp, peeled, deveined, tails removed
Preheat oven to 425 degrees.
To make the BBQ sauce, combine tomato sauce, ketchup, vinegar, sugar, and garlic powder in a small bowl. Mix well and set aside.
Lightly spray a baking sheet with nonstick spray. Take a half-slice of bacon and coat it in the BBQ sauce. Wrap the sauce-covered bacon around a shrimp and place it on the baking sheet with the end of the bacon down.
Repeat with the rest of the bacon and shrimp.
Bake in the oven until the shrimp are cooked through, 10 - 15 minutes. So good!
Banana Split Pie
3 cups light vanilla ice cream
1 1/2 cups sliced strawberries
2 cups Cool Whip Free, thawed from frozen
One 60-calorie sugar-free chocolate pudding snack
2 bananas, sliced
2 tbsp. light chocolate syrup
1 tbsp. crushed dry-roasted peanuts
8 maraschino cherriesSet out all of your ingredients so your ice cream doesn't melt too much once you start assembling.
Once slightly softened, scoop ice cream into a large pie pan and spread into an even layer along the bottom. Evenly place strawberry slices flat over the ice cream, pressing down lightly so they adhere.
Put whipped topping in a bowl. Add pudding and mix thoroughly. Spread pudding/whipped topping mixture into a smooth layer over the strawberries. Evenly place banana slices flat over this layer, and drizzle with chocolate syrup. Sprinkle with nuts and evenly place the cherries on top of the pie. Freeze for about 4 hours (or overnight), until completely firm.
Allow the pie to sit at room temperature for 5 minutes before slicing. Cut into 8 slices and enjoy!
MAKES 8 SERVINGS (Each serving = 172 calories)
Cheeseburger Sandwiches
1 -1/2 lbs.lean ground beef
1/2 tsp.garlic powder
1 pkg.Velvetta Cheese, (16 oz.) diced
2 Tbsp.milk
1 green bell pepper, chopped
1 small onion, chopped
1 cup Ketchup
In a large skillet, brown ground beef and garlic-pepper blend until thoroughly cooked. Drain.
Combine ground beef and remaining ingredients into Crock Pot- mix well.
Cover; cook on low setting for 6 to 7 hours.
Pecan Pie Muffins
1 cup Packed Light Brown Sugar
½ cups All-purpose Flour
1 cup Chopped Pecans
⅔ cups Softened Butter
2 whole Eggs Beaten
Preheat oven 350 F.
Grease your muffin pan (whatever size). In a medium bowl, stir together brown sugar, flour and pecans. In a separate bowl, beat the butter and eggs together until smooth. Stir into the dry ingredients just until combined. Spoon the batter into the prepared muffin cups. Cups should be about 2/3 full. Bake for 20 to 25 minutes. Cool on wire racks when done
